Christmas Plant Based Turkey Dinner

400g turkey seitan

1kg maris piper potatoes
500g carrots
500g parsnips
320g Brussel’s sprouts

Method
Peel, cut and boil potatoes until half cooked through, then drain well until steam stops
While cooling, place a roasting tray in the oven at 200°C and add oil.
When oil is very hot, carefully add potatoes and a pinch of salt and toss so they are covered in oil
Roast in the oven, turning once until golden and crisp – around an hour
Peel and roast carrots and add during the last 30 minutes of potato cooking time.
In the last 5 minutes of cooking add the maple syrup and some salt.
Steam the sprouts for 12 minutes
Slice the seitan turkey 1/2cm thick and heat in half the gravy on the stove top until warmed through
Arrange on the plate as shown
