Christmas Plant Based Turkey Dinner

  1. Peel, cut and boil potatoes until half cooked through, then drain well until steam stops
  2. While cooling, place a roasting tray in the oven at 200°C and add oil.
  3. When oil is very hot, carefully add potatoes and a pinch of salt and toss so they are covered in oil
  4. Roast in the oven, turning once until golden and crisp – around an hour
  5. Peel and roast carrots and add during the last 30 minutes of potato cooking time.
  6. In the last 5 minutes of cooking add the maple syrup and some salt.
  7. Steam the sprouts for 12 minutes
  8. Slice the seitan turkey 1/2cm thick and heat in half the gravy on the stove top until warmed through
  9. Arrange on the plate as shown
