  1. Sweat the onion and garlic in a thick-based pan with the vegetable oil.
  2. When softened add the peppers and seasoning.
  3. Mix and cook gently for 5 minutes.
  4. Add the remaining ingredients and simmer for 1 hour.
  5. Serve with the cooked rice and garnish with the fresh coriander.
