1. Fry No Chicken chunks in vegetable oil until golden 2-3 minutes.
2. Add ginger, garlic, curry paste and bamboo.
3. Cook for 2 minutes then add coconut milk and bring to the boil.
4. Season with salt and simmer for 20 minutes.
5. Finish with lime juice and chopped chillies.
6. Serve on cooked noodles, topped with sliced spring onions.
