1. Cook glass noodles in boiling salted water for 8 minutes.
2. Chop vegetables into pieces roughly all the same size.
3. Heat sesame oil and fry broccoli, then add mushrooms, peppers and beansprouts.
4. When all cooked, add noodles, tofu, garlic and cashews.
5. When all ingredients are hot, add sriracha.
6. Serve and top with crispy shallots
