Plum and Orange Eton Mess, Vanilla Ice Cream, Cinnamon Syrup
40g assorted vegan meringue bites
200g vegan vanilla ice cream
1g vanilla paste
1g ground cinnamon
100g unsweetened vegan cream
110g golden caster sugar
10g edible flowers

Make the syrup by boiling 100g sugar with 100g water until temperature reaches 115°C
Let the syrup cool to room temperature then stir in the cinnamon
Whisk the cream, remaining sugar and the vanilla until soft peaks form
Segment oranges and cut in half, make wedges of plums
Arrange all ingredients on plate as shown
