Vegetable Hyderabadi Curry

Method

1. Heat a little vegetable oil in a saucepan and sauté onions until golden, 3 minutes.
2. Add all vegetables and cook for 5 minutes.
3. Add Hyderabadi sauce and bring to the boil.
4. Cook for 30 minutes or until all vegetables are tender then add coriander.
5. Serve on saffron rice topped with coconut yoghurt.
